Jammin' Salmon

Think jam and salmon don’t go together?  Think again!  This quick, easy recipe can be made in the oven or over the grill.  It is also a tasty way to include more heart-healthy omega-3 fatty acids in your diet.

Ingredients

  • 1/3 cup jam
  • 1 teaspoon Dijon mustard
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • Four 4 ounce salmon filets

Directions

  1. Preheat oven to 350°F and line a 9x13-inch pan with foil.
  2. In a small bowl, combine jam, mustard, paprika, and pepper. Wisk until well mixed.
  3. Spread jam mixture over salmon.  Bake at 350°F for 14-16 minutes or until salmon flakes easily with fork.
