Black-Eyed Pea Salad

Legend has it that eating black-eyed peas with green lettuce on New Year’s Day will bring good luck and financial enrichment. The peas stand for good luck, and the greens symbolize paper money. This recipe is a lower-fat way of enjoying this tradition, which would normally be made with bacon fat. Have a healthy and prosperous 2009!
